"How do you come up with your flavours," is a common question we get asked at the markets.

After both having worked in the restaurant trade for nearly 20 years (we turn 40 next year 😳) we approach our flavour card like we're designing a dessert menu for a restaurant. While there's many chocolatiers out there experimenting with the weird & the wonderful, where we live in East Anglia, we've found our demographic enjoy more traditional & classic flavour combinations. While our designs are very striking & are used to lure in the customer, flavour is of the utmost importance to us. We like to take those comforting desserts you had as a child & elevate them to the next level. During the warmer months we aim to create a lighter menu with fresh, zingy fruit flavours. Then as the colder days draw in we return with the more decadent, rich caramels & deeper flavours, bringing the feeling of being enrobed in a giant, warm blanket.

Very late with this post, as our birthday was actually at the start of March, but we were so busy with Mothers Day & Easter (a great problem to have) that it got over shadowed. We felt like we hit a creative wall after that period & we had no juice left to come up with a nice little way to celebrate. Not only was it our 2nd birthday, but we also hit & went well over 3,000 followers on Instagram...AND celebrated our 11th anniversary!! Pow, pow, pow lots of hurrahs all around!! We felt pretty brain dead last week after our busy season & decided to take things at a slower pace. It's so easy being a business owner & working from home to just say "oh I'll just do this, oh I'll just do that," but you have to remember to just take a step back & have a breather for yourself, otherwise little mistakes will start creeping in & you'll eventually hit burnout. After all, we left the restaurant trade in search for more fulfillment & a better work/life balance. Our venture has already exceeded our expections at this stage, so really we're ahead of the game in the grand scheme of things.

We've got lots of markets & food fairs coming up over the next few months; our planning permission for the conversion has been submitted; we have sample boxes coming for new packaging & we're already working on this year's advent calendars...its aaaaaall happening.

The little fried eggs were too damn cute & huge hit last year, they had to make a return.

Maple caramel, pecan gianduja, jellied apple pieces, milk chocolate shell.

Big, bold & buttery! We initially tried the caramel & gianduja with an apple puree but found it got lost amongst it all. However, a sprinkling of these tart apple pieces worked a treat cutting through the richness. It's a real comfort flavour.

Themed boxes sold out...even with trippling the amounts we did from last year, we have still run out way before our prediction, you guys blow us away, thank you so much for your continued support.

While we won't be making anymore of the themed boxes, we will still be on egg duties & we're changing up the regular menu. Our stocks are incredibly low on the website at the minute so please bear with us as we strive to restock.

We get lots of comments from our customers saying they love seeing all the work that goes into each bonbon, so here's the behind the scenes to the 2nd bunny bonbon of the themed box.

Lighter than air vanilla marshmallow, a rich cinnamon caramel, moreish Biscoff base & all within a Belgium milk chocolate.

Rhubarb Pate de Fruit, Vanilla & Custard Ganache, White Chocolate Shell....spring is creeping in with this little number.

A big shout out to @andrey_dubovik for sharing this technique, loved giving it ago & it worked brilliantly ❤️

Another very insane/passionate decision made with this design...but Si & I never like to take the easy route

We started by making some chocolate shells & just as the chocolate is set (but still soft) we carved various designs into them. We used a non-toxic silicone to pour into the carved chocolate & let it cure for 24 hours, and in the meantime we sprayed the moulds with @ishudkoko soft pink & it's pink cocoa butters.
The next day we removed the stamps from the mould & heated it with a heat gun. Once good & hot we placed it into the pink spray moulds where it would melt the design into the cocoa butter. After removing the stamp, we use sponges to dab out the excess melted cocoa butter....now repeat 352 times!!! We were committed. We sprayed the bunny in Fuschia pink for that lovely contrast.

Once complete, Si shelled the moulds & we proceeded to fill with the Rhubarb & Custard along with the final capping.
